Azalina is getting ready to open the doors of her first brick-and-mortar restaurant, in Twitter's San Francisco headquarters, and her 15,000 square-foot commissary. But as she talks to designers and architects, she realizes she's going to have to make some changes to the kitchen set-up that will eat up valuable time and require a chunk of change to complete.
